Thermodynamics and non/equilibrium criteria for development
and application of supplemented phase diagrams

Tasks

 

Main tasks:

1- Update and classification of the literature (theoretical and experimental) on supplemented phase diagrams, of relevant aqueous systems for food and pharmaceutical sciences, from simple binary solutions to complex systems.

2- Comparison of methods based on measurements at different frequencies to determine phase/state transitions and to assess the effect of water content on their temperatures and kinetics.

3- Proposition of suitable standard procedures to determine glass and enthalpic (crystallization, melting) transition temperatures in aqueous systems over a wide water content range.

4- Analysis of empirical and theoretical models to predict transition temperatures and of their applicability to the systems under consideration.

5- Optimization of the use of state diagrams to predict the stability of biomolecules under different conditions, including pressure effect, multicomponent systems, etc.


Milestones first year (reformulated):

· July 2004:

Define scope of work and responsibilities of each group member.

Start of data base.

· August 2004:

Create web page restricted to the Task Group for sharing information.

· September 2004:

Data base

First Task Group Meeting in Mar del Plata, Argentina (ISOPOW 9).

· December 2004:

First internal release with a critical evaluation of the data base and common theoretical/experimental shortcomings of current practices.

· March 2005:

First draft of the IUPAC Technical Report

Opening of the web page to the public.
